WHAT IS Interface Protein Technology?  

At interfaces, protein structures undergo changes due to surface tensions. Consequently, the functions of, for instance, is a process that disrupts milk caseins stabilized emulsion system in order to cause phase separation, form which cheese curd and whey are separated.  The process of cheese ripening also involves protein functionality and enzyme reaction kinetic changes at interfaces to generate distinguished cheese texture/flavors.  An in-depth understanding of the mechanisms and kinetics involved in the changes of proteins and enzymes at interfaces will enable us to manipulate the functionality of proteins/enzymes to obtain desired outcomes and to maximize the values of protein supply-chain.
